Hospitality & catering

Kitchens that stay compliant without slowing service.

Food safety, health & safety, kitchen workflows, compliance reviews and hygiene improvement — reviewed by someone who runs a commercial kitchen and knows what a Friday service actually looks like.

Scope

Advice that fits your pace, not the rulebook's.

Compliance fails in small kitchens for practical reasons: the system was designed by someone who has never worked a service. We build controls that survive a busy shift, because unusable controls get abandoned and then you have nothing.

Mock EHO inspection & FHRS readiness

A full dry run of an environmental health visit, scored the way the officer will score it.

We inspect against the three things the Food Hygiene Rating Scheme actually measures — hygiene and food handling, structure and cleanliness, and confidence in management. That last one is where most ratings are lost, and it is almost entirely about documentation. You get the likely rating today, the specific gaps costing you points, and the order to fix them in before the real visit.

  • Predicted FHRS score with reasoning by category
  • Photographic findings and evidence gaps
  • Prioritised action plan with timescales
  • Re-check visit to confirm close-out

HACCP & Safer Food Better Business pack build

A food safety management system built around your menu, not a generic folder.

Every food business must have a documented food safety management system based on HACCP principles. We build yours around your real menu and layout: hazard analysis, critical control points, cooking, cooling, hot-holding and reheating limits, supplier and delivery controls, cleaning schedule, and the daily diary that proves it happened. If SFBB is the right route for your size, we use it — no reason to pay for complexity you don't need.

  • Documented HACCP or SFBB system for your menu
  • Daily, weekly and periodic check records
  • Cleaning schedule and supplier controls
  • Staff briefing so the pack is actually used

Allergen management & Natasha's Law compliance

The 14 allergens, PPDS labelling, and a system that survives a menu change.

Allergen failures are the fastest route to prosecution in this sector, and the risk lives in the gaps: a substituted ingredient, an agency chef, a verbal order taken at a busy pass. We build an allergen matrix from your actual recipes and suppliers, get your PPDS labelling right, and put in a change-control step so a new dish cannot go on the menu without the matrix being updated.

  • Allergen matrix per dish, from supplier specifications
  • PPDS labelling check and templates
  • Order-taking and cross-contact procedure
  • Menu-change control step and staff briefing

From £245

Health & safety compliance review

The non-food half that inspectors and insurers still ask about.

Risk assessments including young workers and expectant mothers, fire risk assessment status and escape routes, manual handling, slips and trips, hot surfaces and burns, knives, machinery guarding and safe isolation, COSHH for cleaning chemicals, accident reporting and RIDDOR, first aid provision, and the training records to match. Sized for a small independent, not a national chain.

  • General and task risk assessments
  • Fire safety and escape route review
  • COSHH register for your chemicals
  • Training matrix and record templates

From £295

Kitchen workflow & process review

Compliance that speeds service up instead of slowing it down.

Reviewed by someone who runs a commercial kitchen. We map how food, staff, waste and dirty crockery actually move through your space, find the crossover points that create both contamination risk and lost seconds, and rework the layout, prep sequence and station setup. Fewer steps per cover usually means better hygiene and better margins at the same time.

  • Flow map with contamination and bottleneck points
  • Layout and station recommendations
  • Prep and service sequence rework
  • Waste and cleaning flow adjustments

From £295

Pre-opening compliance check

Open with the paperwork, the layout and the registration already right.

Fitting out or taking over an existing site? Getting it wrong before you open costs far more than getting it right. We cover food business registration timing, layout and finishes against food hygiene requirements, hand-wash and sink provision, ventilation and grease extraction, waste and pest-proofing, temperature control capacity for your menu, and the full document set ready for day one — so your first inspection is a formality.

  • Pre-opening compliance checklist against your site
  • Layout, finishes and equipment review
  • Registration and notification guidance
  • Complete day-one document pack

From £595

Hygiene improvement & rating recovery

A 1, 2 or 3 that needs to be a 5 before the next visit.

A poor rating on the door affects bookings, delivery platform ranking and staff morale from the day it is published. We work backwards from the officer's report, separate the structural issues from the documentation issues, fix the fastest-scoring items first, and get you evidence-ready for a re-score request or re-visit.

  • Officer report translated into a fixed action plan
  • Documentation rebuilt where confidence was scored down
  • Re-score request support
  • Follow-up visit before the re-inspection

From £375

Ongoing compliance retainer

Someone keeping an eye on it all year, not just at inspection time.

A simple monthly arrangement: a scheduled visit or remote check, your records reviewed before an officer ever sees them, refreshers when staff change, and a phone number to call when a supplier, a landlord or an officer asks you something you can't answer on the spot. Most breaches build slowly — this is the cheapest way to catch them early.

  • Scheduled visits or remote record reviews
  • Document set kept current
  • Priority phone and email support
  • Annual compliance summary for insurers or landlords

From £150 / month

Food hygiene rating

Three scores make your rating.

Your rating is the worst of the three, not the average. Most businesses obsess over the first two and lose their points on the third.

01 — Hygiene

Handling, storage, temperature control, cross-contamination and cleaning — the day-to-day practice an officer watches, not what the folder says.

02 — Structure

Layout, finishes, ventilation, pest control, lighting and equipment condition. Cheap fixes here often move a score.

03 — Confidence in management

The heaviest weighting and the easiest to lose: documented systems, completed records and staff who can explain them. This is where we do most work.
